Here’s something that will surprise nobody: at Touchwood Mushrooms HQ, we love cooking with mushrooms. Sure, we get our powdered medicinal mushroom hits each day, but we also love cooking with our homegrown mushies. Read on for a round-up of some of our favourite mushroom recipes.

When it comes to a mid-week mushroom hit, we can’t go past this delicious recipe from BBC Good Food. While it sounds super fancy, this roast mushroom gnocchi recipe is a relatively quick, no-fuss meal. Grab a packet of pre-made gnocchi, some spinach, mushrooms, and blue cheese, and you’re away!

This recipe by Jamie Oliver is a bit more of a commitment, but it would be a breeze to work through on a weekend or work from home day.
