Our favourite mushroom recipes and dishes

Here’s something that will surprise nobody: at Touchwood Mushrooms HQ, we love cooking with mushrooms. Sure, we get our powdered medicinal mushroomhits each day, but we also love cooking with our homegrown mushies. Read on for a round-up of some of our favourite mushroom recipes.

 

1. Roast Mushroom Gnocchi

When it comes to a mid-week mushroom hit, we can’t go past this delicious recipe from BBC Good Food. While it sounds super fancy, this roast mushroom gnocchirecipe is a relatively quick, no-fuss meal. Grab a packet of pre-made gnocchi, some spinach, mushrooms, and blue cheese, and you’re away!

2. Mushroom, gorgonzola and leek crespelle bake 

This recipe by Jamie Oliver is a bit more of a commitment, but it would be a breeze to work through on a weekend or work from home day. Mushroom, gorgonzola and leek crespelle bake is a hearty, warming favourite, which works really well with our fresh shiitakes (available each weekend at the Albany Farmers Market!

3. Lentil and mushroom bolognese

 

Who doesn’t love this classic? Lentil and mushroom bolognese is a great way to load your kids up with vegetables — and it freezes really well, too! The hearty combination of lentils, pasta and vegetables, combined with the tasty umami of mushies is sure to be a hit in your house.

 

4. Mushroom brunch

Mushrooms aren’t just for dinner, people! This beautiful mushroom brunch recipe is quick, easy and oh-so-tasty. Cooking up mushrooms, kale, and eggs for a weekend treat is a great way to get a hit of beta glucans, vitamins, and minerals for the week ahead.
